For generations, the Basque people have been bringing out the delicious flavours of this fish by grilling it over open flames using a simple but effective Turbot Clamp. It means you can turn the fish to grill to perfection, without it falling apart. For days when turbot isn’t on the menu, you can use the clamp as a hanging basket for veg and other meat. It’s Basque in style, but hand forged in our workshop in Somerset, UK.
Our fish clamp was initially called the Turbot Clamp but it is really handy to use when fire cooking lots of different types of fish, mainly large, or you can stack two medium sized fish such as whole bass or whole bream side by side and clamping them in.
